In May 2025, Populus Seattle opened its doors in the historic Pioneer Square neighborhood, marking a significant milestone in sustainable hospitality. Housed within the meticulously restored 1907 Westland Building, this 120-room boutique hotel seamlessly integrates the rich heritage of Seattle with modern, eco-friendly practices.
Populus Seattle stands out as a carbon-positive establishment, meaning it sequesters more carbon than it emits throughout its lifecycle. This achievement is realized through adaptive reuse of existing structures, utilization of 100% renewable electricity, and innovative waste reduction strategies, including the BioGreen360 "Food Cycling" technology that converts all food waste into compost. Additionally, the hotel's "One Night, One Tree" program ensures that a tree is planted for every guest night booked, further contributing to environmental restoration.
The hotel's design pays homage to the Pacific Northwest's natural beauty. Guests are welcomed by a biophilic entryway adorned with native plants and nature-inspired art. The preservation of original Douglas Fir beams and exposed brickwork adds to the building's historic charm. A striking art collection, curated in partnership with global art production house ARTXIV, features over 300 original works by more than 35 local and international artists, celebrating the region's landscapes and cultural heritage.
Culinary experiences at Populus Seattle are deeply rooted in sustainability and local sourcing. Salt Harvest, the hotel's signature restaurant, offers hearth-driven cuisine that showcases the bounty of the Pacific Northwest. The menu emphasizes responsibly sourced ingredients from small purveyors who share the hotel's values of regeneration. The rooftop bar, Firn, draws inspiration from the region's rugged beauty, offering a vibrant setting with sweeping views of the city skyline and waterfront. Firn's cocktail menu features ingredient-focused drinks that are both familiar and unexpected, complementing a simple food offering centered on the craft of preservation.
